Curried Quiche with Chickpeas and String Beans
Pulled from an old vegetarian cookbook: Vegetariana by Nava Atlas
This is one of my favorite potluck dishes. Tastes great, is filling, and is vegetarian.
Servings: 4-6
About 20 min. prep time and 45-50 min. baking time
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 eggs, well beaten
- 1 tablespoon minced fresh parsley or cilantro
- 1 1/2 cups of drained canned chickpeas (garbanzo beans)
- 1 cup steamed string beans, cut into 1 inch pieces
- 1 1/2 teaspoons curry powder
- 1/4 teaspoon ground coriander
- 1/8 teaspoon ground tumeric
- 1/8 teaspoon dry mustard
- Salt and pepper to taste
- 1 regular unbaked 9 inch pie shell
- 1 cup firmly packed grated mild cheese (don't use sharp - it contrasts with the flavors)
- wheat germ and paprika for topping -- I skip the wheat germ
- Preheat oven to 350
- Heat olive oil in small skillet
- When its hot, add onion and garlic and saute over moderate heat until golden
- In a mixing bowl, combine beaten eggs with parsley, chickpeas, string beans, seasonings, onion, and garlic - Mix thoroughly
- Pour half the mixture into the pie shell and top with half of the grated cheese
- Pour in remaining mixture and top with remaining cheese
- Top with wheat germ and paprika
- Bake for 45 minutes or until top is golden and the eggs are set
- Let quiche stand for 5 to 10 minutes before serving
