Curried Quiche with Chickpeas and String Beans

Pulled from an old vegetarian cookbook: Vegetariana by Nava Atlas

This is one of my favorite potluck dishes. Tastes great, is filling, and is vegetarian.

Servings: 4-6
About 20 min. prep time and 45-50 min. baking time


  1. Preheat oven to 350
  2. Heat olive oil in small skillet
  3. When its hot, add onion and garlic and saute over moderate heat until golden
  4. In a mixing bowl, combine beaten eggs with parsley, chickpeas, string beans, seasonings, onion, and garlic - Mix thoroughly
  5. Pour half the mixture into the pie shell and top with half of the grated cheese
  6. Pour in remaining mixture and top with remaining cheese
  7. Top with wheat germ and paprika
  8. Bake for 45 minutes or until top is golden and the eggs are set
  9. Let quiche stand for 5 to 10 minutes before serving
