Cheeseburger Pie

straight from the land of Bisquick and the wonderful Midwest


This was one of my favorite dishes growing up and I rediscovered it a while ago. Simple, easy, and quick. Gotta love Bisquick!
Ingredients

1 lb. ground beef (I use veggie crumbles instead)
1 c. chopped onion (yellow or white - red onion makes it taste sweeter)
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 c. milk (Soy milk makes it turn out kinda weird)
3 eggs (Egg whites work well too)
3/4 c. Bisquick mix
2 tomatoes, sliced
1 c. cheese, grated (I prefer 1/2 cup of sharp and 1/2 cup of mild - unmixed - see below - increase a bit if you like cheese)

  1. Heat oven to 400
  2. Grease 2 quart flat baking dish
  3. Cook meat and onion until brown - if you are using veggie crumbles, brown the onion first, then add the veggie crumbles
  4. Add salt and pepper (sometimes I throw in hot pepper flakes)
  5. In a separate bowl, beat milk, eggs, and Bisquick until smooth - get all those chunks out!
  6. Pour meat into baking dish
  7. My variation: if you have extra cheese - put up to 1/3 c. cheese on the meat
  8. Pour Bisquick/milk/egg mix over meat (and maybe cheese)
  9. Top with tomatoes and cheese - substitute salsa if you want
  10. Cook 5 to 10 minutes or until cheese is melted
