Peanutty Baked Chicken Breast<

This recipe is a variation from the Culinary in the Country blog.



  1. Preheat over to 500F
  2. In a small bowl, stir together the honey and mustard. Set aside.
  3. In a food processor, finely chop the cashews, stir in bread crumbs and chili powder
  4. Place cashew/bread crumb mixture in a shallow bowl
  5. Season chicken lightly with salt and pepper
  6. Brush each portion of chicken - top and bottom and sides - with the honey mustard mixture
  7. Place the chicken in the cashew/bread crumb mixture, coat, and place on oiled baking sheet
  8. Repeat until complete
  9. Bake until done - between 5-10 minutes
