Peanutty Baked Chicken Breast<
Ingredients
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- salt and pepper
- 1/3 cup peanuts - I use cashews
- 1 cup panko breadcrumbs - I use generic brand breadcrumbs
- 4 4-ounce boneless skinless chicken breasts, pounded to 1/2 inch thick
- (optional)chili powder
Directions
- Preheat over to 500F
- In a small bowl, stir together the honey and mustard. Set aside.
- In a food processor, finely chop the cashews, stir in bread crumbs and chili powder
- Place cashew/bread crumb mixture in a shallow bowl
- Season chicken lightly with salt and pepper
- Brush each portion of chicken - top and bottom and sides - with the honey mustard mixture
- Place the chicken in the cashew/bread crumb mixture, coat, and place on oiled baking sheet
- Repeat until complete
- Bake until done - between 5-10 minutes
