Saffron Cake
This recipe was found on Anne's Food Blog. I decided
to start making this quite ofen because saffron is abundant here (Dubai) and much more inexpensive than other
places where I have lived.

Prep: 15 min.; Baking: 45 min.
Ingredients
- 1 g saffron - grind up with a sugar cube in a pestle
- 200 g butter (add a pinch of salt if the butter is unsalted)
- 2 eggs
- 300 ml sugar (about 300 g)
- 150 ml milk (about 150 g)
- 400 ml all purpose flour (240 g)
- 2 tsp baking powder
- Confectioner's sugar to garnish
- Melt the butter, making sure not to button the milk fat - turn off the heat
- Add the saffron, then the milk and let cool - set aside
- Beat eggs and sugar until fluffy
- Add flour and baking powder
- Carefully stir in the butter mixture - a little bit at a time - if you don't it will get everywhere
- Pour into buttered and floured pan - preferably springform
- Bake at 175C for 40-45 minutes until the cake is no long sticky
- Sift some confectioner's sugar on top
